Peanut Banana Muffins


I love to make healthy food for Axel on a Sunday for the week ahead which stops us from him (and us) from snacking on junk food. We are obsessed with peanut butter so these babies sre super easy and a god send.

Peanut Banana Muffins


4 eggs

1/2 teaspoon vanilla bean (or essence)

3 bananas

4 tablespoons peanut butter (I use Pic's peanut butter)

1 tablespoon Tahini (optional)

1 cup oats

1/2 cup almond meal

1/2 teaspoon baking soda (gluten free - you can find at a health food shop)

1 teaspoon cinnamon

2 tablespoon protein powder (optional - I use Prana On)



Step 1 Preheat oven to 180 degrees.

Step 2 Line muffin trays with your preferred; butter/coconut oil, cupcake patty's or baking paper.

Step 3 Add eggs, vanilla bean in a blender and blend for 20 seconds - medium speed

Step 4 Add bananas, 2 tablespoon peanut butter and tahini. Blend for 20 seconds or until smooth

Step 5 Add oats, almond meal, protein powder cinnamon, baking soda. Blend for 30 seconds (medium speed, or lower if you want chunky muffins)

Step 6 Pour mixture evenly into trays.

Step 7 Bake for 15-20 minutes

Step 8 Allow cooling for 1 minute. Transfer to a baking tray.

Step 9 Top with peanut butter and banana and a sprinkle of cinnamon

Best served warm (and maybe with some organic butter). Makes 12 smaller muffins or 6 large.
