Healthy Banana Bread


Axel is a carb lover and can eat up to five pieces of bread a day (not kidding). As he is a busy little bee, he needs plenty of nutrition for energy  I don't love him having so much bread, in fact, I don't love him having too many processed foods. When I cook, I know exactly what goes into our bodies. so I make healthy options. This is my go to most weeks. It's easy peasy to make and can be kept in the freezer for emergencies...


4 x bananas

3 eggs

60 grams rice malt syrup

1 teaspoon vanilla bean paste

1 cup desiccated coconut

½ cup almond meal


1/4 cup coconut oil (melted)

Walnuts (optional)

Step 1 Preheat oven to 180 degrees. Grease and line base of a large 13.5cm x 23.5cm loaf pan.

Step 2 Add maple syrup, eggs, vanilla bean paste together in a blender/thermomix for 3 minutes.

Step 3 Add bananas. Mix together until smooth.

Step 4 Mix remaining ingredients.

Step 5 Pour mixture into pan.

Step 6 Bake 180 degrees for 20-25 minutes or until a skewer comes out clean when tested. Cool in pan briefly then turn out onto a rack to cool.

Best served warm or cold
