Seriously who doesn't love pancakes?! Being a pancake lover, I needed to find a healthy option. All the pancakes I made while growing up consisted of a lot of sugar or were from a packet. My beautiful friend Laura gave me this recipe years ago and I have never looked back. Axel LOVES these and asks for them all the time. I find that the banana, pomegranates, and berries make it sweet enough so you don't need to add any more sweetness, but you can mix it up, howeverrrrrrrr you like.
2 x banana
1/2 cup desiccated coconut
Step 1 Combine all ingredients in a blender for 1 minute until smooth.
Step 2 Heat butter in pan.
Step 3 Pour into the pan (I use butter as I like the taste better with these but you could use coconut oil).
Step 4 Cook for a minute on both sides.
Step 5 Top with whatever your heart desires.
