Healthy Muesli Bars

This recipe is inspired by my beautiful friend Lilian Dikmans from Real Food Healthy Body. You need to check out her recipes, they are so deeeelious. Lil uses a lot of the same health-based ingredients, so her recipes don’t cost you an arm and a leg.

I loved muesli bars as a kid, but I wasn't aware that they were pumped full of sugar. So enter a healthy version, jam-packed with healthy fats.

Everyone I give this to LOVES IT!!! Such a great snack for our babies, too. You can add in whatever nuts and dried fruit you have in the cupboard. It literally takes five minutes to make.

1 cup raw almonds
1 cup rolled oats
1/2 cup sultanas or currants
1/2 cup cranberries
1 teaspoon cinnamon powder
Pinch sea salt
1/4 cup coconut oil (melted)
2 tablespoons rice malt syrup
1/4 cup desiccated or shredded coconut
1 teaspoon pure vanilla extract


Step 1 Place the almonds in a blender and pump for a few seconds until the almonds break up a little. Be careful not to over-blend, you still want your almonds to be chunky.

Step 2 Add oats, sultanas/currants, cranberries, cinnamon, coconut, and salt. Mix.

Step 3 Add coconut oil, rice malt syrup, and vanilla, whisk.

Step 4 Add wet mixture to dry.

Step 5 Line a loaf tin with baking paper. and then tip the muesli mixture into the tin. Press the mixture firmly into the tin using the back of a spoon or the flat base of a glass. 

Step 6 Poor mixture into tin and press down firmly using a masher.

Step 7 Transfer to the freezer for 1 hour to set.

Step 8 Remove from freezer and cut into bar as desired.
