Sweet Baked Potato with an Avocado Salsa

I have been making this dish for YEARS. I think I found the original recipe online somewhere and I have altered it to suit my taste. You can pair with meat or fish but it is also a substantial meal in itself.

Ingredients

1 whole sweet potato

1 tablespoon coconut oil

1 teaspoon cinnamon

1 teaspoon cinnamon

Salsa

1 whole avocado

3 sprigs mint

1/2 punnet cherry tomatoes

Corn (optional)

Salt and Pepper

 

Step 1 Preheat oven to 180 degrees.

Step 2 Cut the sweet potato down the centre and peel apart (try not to cut in half).

Step 3 Dribble inside of sweet potato with coconut oil and cinnamon. Cover in aluminium foil like a basket, leaving the top easy to access. Pop in the oven on a tray on 180 degrees for 1 hour.

Step 4 Cover in aluminum foil like a basket, leaving the top easy to access. 

Step 5 Pop in the oven on a tray on 180 degrees for 1 hour (test with a fork to see if its soft inside). Cool for 10 minutes.

Step 6 Mix all salsa ingredients in a bowl and season with salt and pepper

Step 7 Open the sweet potato and add salsa mix to the middle as shown.
